  • Stripped of their feathers, plucked ducks await the next stage during a family Foie Gras business in French Alsace. The Kessler family live on a farm in the quiet village of Boofzheim in Alsace, France. Their business is producing Foie Gras and they raise force-fed ducks near the German border region. The youngest member is daughter Mireille wearing a blood-stained apron. She has cut the throat of a duck, draining the body and especially the liver of blood. After tapping the head with a knife to render the animal unconscious, she stands in a pool of  blood from other birds which stains the courtyard floor. On the left, her parents and grandmother are plucking the feathers from newly-killed carcasses which are strung up on a special rack for this purpose. France produces and consumes the most Foie Gras in Europe using the French Gavage method of forcing ducks or geese to consume vast quatities of corn mash down the esophagus two weeks before slaughter.

Holding her eyelids up with a thumb in preparation of giving the woman the necessary medicine, the young health professional reaches for his equipment and the lady is left looking rather startled and uncomfortable for a few moments as her eye stares wildly. We are in her small cottage on the outskirts of town and the doctor is making his rounds to various patients unable to attend his daily surgery. These jetties are owned by the airport operator, used by British Airways and sponsored by HSBC. A passing aircraft taxies past on the left and the other two planes have wingtip devices increase the lift generated at the wingtip which smooth the airflow across the upper wing near the tip and reduce the lift-induced drag caused by wingtip vortices.   • Blue and red dye stains on the 'line' at RAF Scampton, Lincolnshire, home base of the elite 'Red Arrows', Britain's prestigious Royal Air Force aerobatic team. The spilled dye provides the team with their distinctive red, white and blue smoke (a vegetable dye and diesel fuel mixture) during their air show display routines. While on the ground, this non-toxic derv/vegetable dye is injected into a vacuum under pressure into the jets' modified belly-pod which in varying amounts of concentrate, gives off a smoke via three nozzles that point down into the jet's efflux, the exhaust that exits the jet pipe at 500°C. For a display, the pods hold enough dye for 5 minutes of white smoke, 1 of blue and 1 of red while the Synchro pair uses slightly more. 7,200 gallons of dye during the entire 2004 season and since 1965 they have flown over 4,000 such shows in 52 countries.

  • Flight Lieutenant Dan Simmons of the elite 'Red Arrows', Britain's prestigious Royal Air Force aerobatic team, zips up his g-pants before climbing into his Hawk jet. G-pants counterac the effects of high gravity stresses that jet-fighters impose on the human body, automatically inflating and squeezing blood back to the thorax and head when blood drains towards the legs. As he attaches the zipper, he rests his straight right leg on a retractable step which helps him and his ground crew engineers to gain access to the cockpit, high above the ground. Hanging from another part of his airplane is his life-vest which he will wear around his neck, whilst in flight. Flight Lieutenant Simmons wears heavy-duty black boots which are regulation footwear for flying personnel and dressed in his red flying suit that is famous around the world.

  • The Hawk jet aircraft of the elite 'Red Arrows', Britain's prestigious Royal Air Force aerobatic team, are lined up at RAF Akrotiri, Cyprus as members of the team's ground crew step away from the aircraft that they respectively look after. From a low angle we see a wide landscape looking over the taxi-way markings that direct military airplanes. The Red Arrows aircraft are a deep red colour that stand out against the horizon in an identical line. It is a wide expanse of road surface, the yellow centre-lines are for the benefit of pilots who need guidance for parking areas after landing, or leaving towards the departing runway on the southern part of the Cypriot Mediterranean island. With the Red Arrows, the nine taxiing jets all peel off in unison to and from the parking area and these lines are vital for this technique.

  • Ground crew of the elite 'Red Arrows', Britain's prestigious Royal Air Force aerobatic team polish the aircraft's flying surfaces using wool and cleaning fluid on the morning of the team's PDA Day. PDA (or 'Public Display Authority'), is a special test flight when their every move and mistake is assessed and graded. Corporal Faulder is to buff up the airplane for an extra special shine on such an important day and we see the UK's Union Jack flag on the side of the diagonal stripes of the tail fin. The Red Arrows ground crew take enormous pride in their role as supporting the aviators whose air displays are known around the world. Blues like Mal outnumber the pilots 8:1. Without them, the Red Arrows couldn't fly.

  • Outside Heathrow Airport's Terminal 5, during the turnround of a British Airways jet aircraft, the refueller's heavy fuel nozzle is plugged into the airfield's underground reservoirs to pump some 109 tons of Jet A1 aviation fuel flowing at a rate of 3,000 litres a minute, to be uplifted into the wing tanks of a Boeing 747-300, a typical quantity of extra fuel for this aeroplane bound for Los Angeles.   • Michelangelo's David's genitalia appear on tourist aprons souvenirs on sale in Piazza Michelangiolo above the city of Florence. Reproduced on trinket clothing, the penis is positioned at the front. It is said that the genitals were created smaller to imply that David was not allowing himself to make decisions with pleasure in mind. "David" is a masterpiece of Renaissance sculpture created between 1501 and 1504, by the Italian artist Michelangelo. It is a 5.17 metre (17 feet) marble statue of a standing male nude. The statue represents the Biblical hero David, a favoured subject in the art of Florence but soon came to symbolise the defence of civil liberties in the Florentine Republic, an independent city-state threatened on all sides by more powerful rival states and by the Medici family.

  • Foire Gras and dairy farming family's women experience hardships together during breakfast at their home in Alsace. ..The Kesslers live on the farm in the quiet village of Boofzheim in Alsace, France. Their business is producing Foie Gras and they raise force-fed ducks near the German border region. The youngest member is daughter Mireille wearing a blood-stained apron. She is about to cut the throat of a duck, draining the body and especially the liver of blood. After tapping the head with a knife to render the animal unconscious, she stands in a pool of  blood from other birds which stains the courtyard floor. On the left, her parents and grandmother are plucking the feathers from newly-killed carcasses which are strung up on a special rack for this purpose. France produces and consumes the most Foie Gras in Europe using the French Gavage method of forcing ducks or geese to consume vast quatities of corn mash down the esophagus two weeks before slaughter.

A member of the team's support ground crew (the Blues because of their distinctive blue overalls worn at summer air shows) prepare to refuel as the last daylight fades and artificial light from the hangar illuminates the scene. Their winter training schedule is both rigorous on the aircraft and demanding on the pilots who will typically fly up to six times a day in preparation of the forthcoming summer when they display at 90-plus air shows. After the day's flying, the engineers' night shift arrive to service and maintain the aging fleet of 11 aircraft. .

  • Theodore Kyriakou is seen in his Real Greek restaurant in Hoxton, East London. He smiles to the view dressed in chef's apron and with a pen behind his ear. This Greek-born chef once served in the military but realised his ambition to cook by coming to London and eventually being the co-owner of Livebait, the renowned London fish restaurant chain. In 1999, he finally opened a restaurant specialising in the kind of food his mother used to make. The Real Greek was in business, recreating many of the dishes he remembered, he introduced authentic Greek cuisine to a new audience. Kyriakou's parents ran a deli in Athens. His mother, a natural cook, didn't follow recipes, though many of her dishes are influenced by a 2,000-year-old cookbook, the Deipnosophistai by Athenaeus. She still gets calls from her son to check facts.

The couple are seen as silhouettes against the natural light of the large plate glass windows. As the aircraft is readied and before the flight's air travellers are called to the departure gate, the young man and woman put their heads imagining what new things they will see as their airliner is about to transport them to experience new cultures and possibly a new life.   • Squadron Leader Duncan Mason of the elite 'Red Arrows', Britain's prestigious Royal Air Force aerobatic team, strides out across a gloomy, rainswept 'apron' at RAF Scampton, Lincolnshire. Squadron Leader Mason will fly up to 6 times daily during winter training ,when weather permits, learning new manoeuvres. Wearing winter green flying suits, their day is spent flying and de-briefing. Mason  wears a green flying suit with anti-g pants and helmet on with its pilot number. He is being greeted by a member of the team's support ground crew who outnumber the pilots 8:1.  The engineer wears a fluorescent yellow tabard and stands politely by the waiting aircraft on the 'line'. He has already prepared it for flight and helps with any technical issues that may arise.

  • The flight-deck crew of a Sri Lankan Airlines A340-300 series Airbus - registration number 4R-ADE - perform a series of pre-flight checks before a scheduled departure, while on the apron at Malé international airport in the Republic of the Maldives. Featuring electronic instruments it is known as a 'glass cockpit' and using a printed checklist manual, they methodically work through dozens of complex systems that require accurate input before the aircraft is ready for take off. Flight navigation computers, fuel and engine settings and radio frequencies all need programming by the two pilots, the captain on the left and the First Officer on the right. These modern airliners have only two pilots in a modern flight-deck as technology superceeded the need for a third member, the flight-engineers of a previous era of aviation.

  • Parked on the apron at Paris Orly Airport, a lone pilot of the French national airline Air France, leans out of his right-hand seat's cockpit window of his Boeing 777-328/ER aircraft (F-GSQT). It is a bright morning at this international hub for Air France and without help from ground staff, the silver-haired gentleman who may be the captain and commander of the aircraft (because of age and seat position) has decided to get on with the job of cleaning his window himself much like a driver wiping away flies from his car windscreen. Here however, this chore being performed approximately six meters off the ground so safety is vital - just as a clear front view for the flight-deck crew before their flight. Attached to the plane is the mobile walkway, the air bridge, that awaits boarding passengers but no 'ramp agent' is below.  .
